I adore this salad in the summer. It is crisp and refreshing with a little bit of funk. You can size it up, and it is great for summer BBQs.
This recipe is my meal-size salad. I will make it, especially if there is a calorie-laden meal happening during the day. Calories: approximately: 242
2 cups diced watermelon (I am lazy. I buy chunks and cut them down.)
2 tablespoons reduced-fat feta cheese
1/2 shallot diced (or 1/4 cup diced onion-Vidalias are fantastic in this)
About 5 or 6 mint leaves (roll them up, and slice them into ribbons)
1 tablespoon red wine vinegar
2 teaspoons of olive oil
salt and pepper to taste
Put the watermelon, feta, shallot, and mint into a bowl. In a smaller container, mix the red wine vinegar and olive oil, then pour on the watermelon mixture. Salt and pepper to taste.
You can eat this right away, or cover to eat later. You will love it!
