I love pasta. And with pasta, sausage!!! The saddest thing with store-bought sausage is that it is full of nitrates and preservatives. Ground pork is pork and some salt. So, using ground pork as a base, you can make your own sausage without all of the chemical additives. Like with all meat, I separate it into single servings and freeze.
Oh, a tip. If you want the sausage to brown when you cook, use a little brown sugar. Otherwise, it will be a little grey but taste great.
Italian Sausage
1 lb ground pork
1 garlic clove
1 tsp fresh basil
1 tsp fresh thyme
1 tsp of fennel seeds
Mix it all together. I wrap it in plastic wrap and let the flavors meld for a couple hours. Then cook up for fantastic Italian food.
Breakfast Sausage
1 lb ground pork
1 garlic clove
1 tsp fresh sage
1 tsp fresh thyme
a little shake of fennel seeds
2 teaspoons of dark brown sugar (optional)
You can make this into patties or keep in the bulk form. Mix it all together. I wrap it in plastic wrap and let the flavors meld. Cook it up for breakfast burritos or sausage and eggs. Yum! I am hungry!
