Blueberry Oatmeal Bake


This is a yummy little breakfast that is great for a chilly weekend morning. The great thing about this recipe is that you can also use any dried fruit. I have some crasins and walnuts which will be my next alteration of this. I hope you enjoy!

1/2 cup regular or quick-cook oats
4 tbs of boiling water
1 tbs of blue agave syrup
4 tbs of vanilla yogurt (2 for the bake and 2 to top the bake with later)*
juice of 1/2 a lemon
a handful of fresh or frozen blueberries
1/2 tsp of baking powder
1/2 tsp of cinnamon (or more if you really like cinnamon!)

Preheat oven to 400 degrees. Line a small shallow baking dish with parchment paper or spray with PAM.
In a bowl, combine the oats and water, stir, and let sit for a few minutes. (This is a great time to start your coffee!)
Add in the rest of the ingredients (remember only 2 tbs of yogurt) and stir well. Spoon the mixture into the prepared baking dish—Bake for about 30 minutes. Top with the remaining yogurt, and enjoy!

* I use Carbmaster yogurt. It is lower in carbs and higher in protein. You can find it at Kroger/Smiths/Giant stores.
