
Yummy yummy yum! This came out great! And it is fast and easy to put together. The wonderful thing about this recipe is you can change it up so easily with different spices. This makes enough for two (213 calories) or three meals (142 calories) for a single person. And, it has about 425 calories for the whole pot!
1 tsp olive oil
1/2 onion diced
1 stalk celery chopped
2 cloves of garlic smashed and choppped
3 cups veggie broth
1 roma tomato diced
1/2 carrot diced
1/2 cup lentils
1/4 cup quinoa
salt & pepper
Favorite spice combo to taste
(Spice combo examples: African Berbere, Tumeric, and Red Pepper or Garam Marsala, Tumeric, and Cumin, Or Chili Powder, Cumin, and Oregano)
Rinse the lentils and quinoa in a sieve for about 1 minute. Let drain. In a large saucepan, heat olive oil on medium-high. Add onion and celery. Lightly salt and pepper. Sautee veggies for about 3 minutes. Add garlic and saute for another 30 seconds to 1 minute. Be careful not to burn the garlic. Add the veggie broth, tomato, carrot, lentils, quinoa, and spice combo. Bring to a boil and lower the heat to low. Allow the stew to simmer for about 20-30 minutes until the lentils are cooked to you liking. (I didn’t use enough broth this evening, so it isn’t so much a stew, but it tastes great!)
I ate this with some whole wheat street taco tortillas.
